
Valentine’s Day is just around the corner, so I thought this would be the perfect time to share a recipe for cakey red velvet and white chocolate cookies! If you’re loved up or single pringle, these are delicious, whatever the occasion, you can share these or scoff them all to yourself which I have been guilty of doing…
Ingredients
– 200g plain flour
– 20g cocoa powder
– 150g light soft brown sugar
– 2 tbsp natural yogurt
– 1/2 – 1 tsp red food paste
– 1 tsp baking powder
– 1/4 tsp baking powder
– 115g butter
– 50g caster sugar
– 1 egg
– 1 tsp vanilla extract
– 100g white chocolate (chips or a broken up bar)

Method
1 – Combine the flour, cocoa, salt and baking powder: set this to one side
2 – Beat the butter and both sugars together until the grainy texture disappears
3 – In a separate bowl, beat with egg with the vanilla, yogurt and red paste. Add this to the butter and combine until smooth
4 – Fold the flour mix in to the ‘red mix’ until combined, before mixing in the white chocolate
5 – Place in the fridge to chill for about an hour, so the mix is easier to mould later
6 – Pre-heat the oven to 180°c. Make golf-ball sized blobs and press down slightly
7 – Bake for 10 – 12 mins; remove from the oven and allow the cookies to cool completely


Save the rest of the mix in the fridge or the freezer! You can microwave it for a treat in less than a minute!
