Apologies for the lack of a post last week, I was in fact very ill which is unlike me – I will spare you the details. I hope you are staying safe and well during this uncertain and confusing time. I haven’t been able to get the original post I wanted to go up due to recent events, however I am bringing you a delightful Nutella cookie recipe!
These can be created in a matter of minutes; these are best made in the oven, but can also be blasted in the microwave! Feel free to swap the Nutella for some other spread (I love Biscoff!) and make a claim of your own!
– 200g butter
– 300g caster sugar
– 1 egg
– 320g self-raising flour
– 1 tsp salt (flakes)
– 170g Nutella (feel free to bump it up to 200g if you’re a Nutella addict!)
Preheat oven to 180°c
1 – Cream together the butter and sugar, followed by the egg
2 – With a spatula, gradually mix in the flour and salt to form a dough
3 – Add the Nutella, mixing it to create a marble effect
4 – Roll into balls (you decide the size, see step 5) and place on a baking sheet
5 – Bake in the oven
– For each baking sheet leave enough space between each to spread out
– 4 big balls – 10-12 mins or 8/9 smaller ones – 8-10 mins
6 – Remove from the oven and transfer to a wire rack. They may seem a little too squidgy, but leave them for at least 15 mins before indulging!
